I made this for a local tea room:
Banana Cream Pie
2/3 c. sugar 1/3 c. cornstarch 3 c. milk (I used whole milk) 4 egg yolks 2 T. butter or margarine 1 Tablespoon vanilla extract 2-3 bananas 1 9-inch baked pie shell
Combine sugar and cornstarch in a heavy saucepan. Stir in milk until blended. Cook over medium heat, stirring frequently, until mixture comes to a boil. Remove from heat. In a small bowl, beat the egg yolks. Add a few spoonsful of the hot pudding mixture to the eggs. Stir together quickly and return the egg mixture to the hot pudding, stirring quickly to blend all together. Return to the heat and again bring to a boil. Remove from heat and add butter and vanilla. Let stand 5 minutes, stirring occasionally. Pour about a cup of pudding into the pie crust. Slice one banana over pudding layer, covering the bottom. Layer another cup of pudding, and then sliced banana to cover the pudding layer. Top with remaining pudding. (You may have too much, in which case you'll have to eat a little dish of warm vanilla pudding!). Cover with plastic wrap and refrigerate until cooled. Serve with whipped cream.
