Easy Eggnog

2 eggs, beaten (pasteurized egg product such as Egg Beaters)
3 1/2 c milk
2 Tb sugar
1/4 tsp nutmeg
1 small pkg instant vanilla pudding

In large bowl, combine eggs, milk, sugar and nutmeg. Add pudding mix. Beat with rotary beater or wire whip until well blended. Keep chilled. This is smooth and creamy from the pudding.

I am thinking of substituting egg beaters (or something similar) for the uncooked eggs this year. Enjoy!
