I have made that kind of topping before, but not with pineapple. The following recipe might work with some drained crushed pineapple added to it, but broiling time might have to be increased a bit, due to the extra moisture in the pineapple.
BROILED COCONUT TOPPING
1/2 cup packed brown sugar 1/4 cup margarine or butter, softened 2 tablespoons milk 1 cup flaked coconut 1/2 cup chopped nuts, optional
Beat the sugar and margarine or butter until combined. Stir in milk. Stir in coconut and nuts. Spread over WARM 9"x13" cake layer (use a metal pan only--not glass). Broil about 4-inches from heat for 3 to 4 minutes or till golden. Serve warm.
