OLD-FASHIONED LEMONADE
This delightful recipe is from The Anne of Green Gables Cookbook by Kate Macdonald.
1 1/2 cups granulated sugar = 375 mL 1 1/2 cups water = 375 mL 1 tbsp. finely grated lemon rind = 15 mL 1 1/2 cups lemon juice (6 to 7) = 375 mL Thin lemon slices Mint springs
In small saucepan, stir together sugar, water and lemon rind. Bring to boil, stirring constantly; boil for 5 minutes, stirring. Remove from heat and let cool. Stir in lemon juice. Transfer to jar; cover and refrigerate for up to 3 weeks.
To serve, place 2 ice cubes in each tall glass. Add 1/4 cup (50 mL) of the syrup and 3/4 cup (175 mL) cold water; stir well. Garnish with lemon slice and sprig of mint. Makes about 3 1/4 cups (800 mL), enough for 12 servings.
