I've made pickled eggs. Put hard boiled eggs in the pickle juice (I also keep the beets in it). Add sliced onions, some pickling spices, whole cloves. Let sit in refrigerator a few days, then enjoy. some people think it sounds gross, but they are really good. pretty colors for Easter.. purple (whites) with yellow yolks.
