Easy Carrot Cake
2 large eggs, lightly beaten 1 (8 ounce) can crushed pineapple, undrained 1 (8.25) package yellow, spice or French white cake mix 1/3 cup mayonnaise 1 cup shredded carrots or sweet potatoes 1 teaspoon ground cinnamon is using French white cake mix 1/2 container of cream cheese frosting
Combine first ingredients in a large bowl, stirring until blended. Pour batter into a greased and floured 9-inch square pan. Bake at 350 degrees for 30 minutes or until done. Cool completely. Frost over top of cake.
Yield: one 9 inch cake.
