I didn't see your post earlier, this is in my collection and I believe clipped from Southern Living magazine. Is this close to what you are looking for? I think there are also recipes using chocolate and sweetened condensed milk with the coconut.

Coconut Joys

1/2 cup butter or margarine
2 cups sifted powdered sugar
2 cups flaked coconut
1/3 cup semisweet chocolate morsels

Melt butter in a saucepan over low heat; remove from heat. Stir in sugar and coconut; shape into 3/4 inch balls. Chill until firm.

Place chocolate morsels in a small heavy-duty ziptop plastic bag; seal. Submerge in hot water until chocolate melts. Snip a tiny hole in 1 corner of the bag, and drizzle chocolate over coconut balls. Store in refrigerator.

For chocolate-covered coconut joys, microwave 2 cups (12 ounces) semi-sweet chocolate morsels in a 2-cup glass measuring cup at HIGH 1 1/2 minutes or until melted, stirring twice. Dip coconut candies in melted chocolate, allowing excess to drip, and place on wax paper. Let stand until firm.
