Kimmelwick Rolls - from my CIA days
12 oz. Water (110 deg.) 1/2 oz. dry yeast 1/2 oz. sugar 20 oz. Bread Flour 1/2 oz Butter 1/2 oz. salt 1 ea. egg white Caraway seeds - as needed to sprinkle Kosher Salt - " "
1. Combine water,sugar, yeast,...let stand 10 min. 2. Process flour,butter salt, just to combine. 3. add yeast mix to processor, pulse til smooth dough is formed 4. Proof dough in covered oiled bowl til double. 5. Punch down and scale into 4 oz. pcs. 6. slightly flatten into 5 in. discs. 7.Place on parchment lined pans sprinkled w /cornmeal. 8. proof again in warm (200) oven til double in size 9. Brush w/ eggwhite - sprinkle w/ salt and caraway seeds 10 Bake in 400 degree oven til done -approx. 15 min.
