You might try baking bar cookies, chocolate chip cookies work well. Then, vacumn seal and send. By stacking and packing carefully into tin containers or very hard sided cardboard boxes these travel well and I think would survive the trip.

Gingerbread cookies also last well and could be cooked in sheets versus cutting out with cookie cutters. The sheets could be wrapped individually and then packed closely and would most likely endure the trip. I know they are good after a month. If you need a recipe just send a reply and I'll post!
