firstly, i am sorry to cut into your conversation...

the discussion of the fish pie made me think of this fish flan i used to make while staying in australia. my good neighbour lyn only eats fish and chicken breasts so this was one of the few dishes that i could share with her. thought you might like it???

fish flan

1 1b/400g potato (boiled)
2 oz/50g butter
1 egg, separated
8 oz/ 200g white fish (boiled)
1/2 small onion (chopped)
1 bay leaf
1 oz/25g plain flour
milk
1/2 t. salt
shake of pepper
1 T. parsley (chopped)

**sometimes i use spring onion or coriander.
** I have also done this with yam and sweet potato.

cream potatoes with 1 oz butter, egg yolk, and seasoning.
shape the potato into a flat round of about 7"/ 18 cm in diameter on a piece of greased paper place on a baking tray and build the edge up to about 1 "/ 2.5 cm.
bake in a moderately hot oven for about 15 minutes. Cook the fish gently in very little water with the onion and the bay leaf. remove the fish, discard the leaf and make up to 1/4 pt/ 125ml with milk.
melt 1 oz/ 25g butter in a pan, add flour and gently cook for a few minutes, stirring all the time.
remover from the heat add liquid and seasoning, stir well and return to heat. cook gently for few minutes longer. flake fish coarsely with a fork , add parsley and sauce and mix.
whisk the egg white until stiff on top speed.. gently fold in the fish mixture and place carefully in the potato case. bake in a moderate oven for a further 20 minutes until top is golden brown.
