First of all, tell your husband thanks from AZ. We appreciate what he is doing. This is a recipe my Grandmother and now my Mom always made a lot of at Christmas. They are made ahead of time and last thru the season and past New Years, so I know they will make the trip and still be good.

Lebkucken

5 cups flour
1 teaspoon ground cloves
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 cup candied fruit, chopped fine
(available in the produce dept.)
4 eggs
2 cups sugar
2/3 cup honey
1 1/2 cups sliced almonds
confectioners sugar
fresh lemon juice

Stir together the flour, cloves, cinnamon, baking soda and candied fruit. Reserve. Beat together the eggs, sugar, honey and almonds. Stir in the reserved flour mixture by hand. (This takes some elbow grease, it's quite a stiff dough)Spread dough in three greased 8" square pans. Bake at 350 for 30 minutes. Remove from oven and spread immediately with a glaze made by mixing enough fresh lemon juice with confectioner's sugar to make a glaze consistency. Cool, then cut into bars 1" x 2".
That's the recipe, sorry it's not any more specific on amounts in the glaze department. Mom has been making it for so long she just knows when it's right. Hope your hubby and his friends enjoy the cookies, know they will appreciate whatever you send from home! Do you know of an address where someone could send cookies and things to the soldiers there?
