Lisa, the recipe I have in my book of personal favorites is very close to eggy/m'sia's but is called Wacky Cake, says it can be doubled for a 13"x9" pan and has a yummy Penuche Icing on it. Here's the icing recipe-
Penuche Icing (makes enough for the 13x9 size cake)
1/2 cup margarine 1 cup packed brown sugar 1/4 cup milk 1 3/4 to 2 cups powdered sugar (about)
Boil margarine and brown sugar on low for 2 minutes stirring constantly. Add milk and bring to a boil. Remove from heat and immediately beat in enough powdered sugar to reach desired icing consistancy. Enjoy!
