Rich Zucchini Muffins
3 eggs 2 cups sugar 1 cup oil 1 teaspoon vanilla 2 cups loosely packed grated zucchini 2 cups sifted flour 1 teaspoon salt 2 teaspoons baking soda 2 Tablspoons cinnamon (Yes, 2 Tablspoons!) 1 cup chopped nuts
In a double boiler beat eggs over boiling water until frothy. Add sugar, oil & vanilla. Beat until lemon colored & thick. Stir in zucchini, flour, salt, baking soda and cinnamon. Beat for 5 minutes. Remove from heat and fold in nuts. Fill greased muffin tins 1/2 full. Bake at 350 for 20-25 minutes. Makes about 30 muffins.
