One Dessert type recipe I always enjoyed when camping was baked apples.

The general idea is that you core the apple, stuff it with goodies, wrap it in tinfoil and put it in the fire. It may take somewhat long to roast, but it can go in the fire at the beginning and then should be ready for dessert. Remember to roll it around at times. (You'll know its done when the apple is tender)

Possible stuffings include any combination of the following:

butter
Peanut butter
brown sugar
cinnamon
raisins
marshmallow
chocolate chips
walnuts
etc.

You can easily core, stuff and wrap the apples before going camping. You can also make this recipe by roasting the apples in the oven. Seems to me to take somewhat longer to cook though. About 1 hour.
