Even though I have not MADE these biscuits, I HAVE TASTED the biscuits made from this recipe, and they were delicious!
Eastern Shore Sweet Potato Biscuits

2 c. all-purpose flour
3/4 c. sugar
2 Tbsp. baking powder
1 tsp. salt
1/4 cup brown sugar
1/2 cup butter
2 cups mashed fresh sweet potatoes (cooked, peeled, mashed)

Sift together flour, sugar, baking powder and salt. Add brown sugar and stir. Cut in butter. Add sweet potatoes (See note.)

Note about sweet potatoes: Thoroughly drain excess liquid from sweet potatoes. (The sweet potatoes can be cooked in a crock pot.)

Knead dough lightly. Place on lightly floured board, and roll out to 1/2-inch thickness; cut with biscuit cutter, Bake at 400º for 10-12 minutes.
