To the cook looking for the Bisquick Impossible Coconut Pie Recipe:
Impossible Coconut Cream Pie
2 cups milk 1 cup shredded coconut 4 eggs or equivalent 3/4 cup sugar 1/2 cup Bisquick 1/4 cup margarine 1 1/2 tsp vanilla extract
Preheat oven to 400. Lightly grease 9 or 10-inch pie pan. (I use glass pie pans, but I don't think it matters.)
Mix all ingredients together for about 15 seconds in a blender, or 1 minute with a hand mixer.
Pour into pie pan. Bake 50 - 55 minutes until done. Serve with whipped cream or Cool Whip, if desired.
