I had an Easter brunch once that was very successful. I had several types of quiches (regular size). So you don't have to make giant sized dishes, you can stack them in the fridge and keep some in reserve on low heat in the oven til you need them. I baked lemon poppyseed bread. Had fruit juice, canned mixed fruit. Think we had some kind of sausage. Hashbrown casseroles are always popular. You could have champagne. You could have like a spiral ham thinly sliced and bread mayonnaise and mustard.
