This recipe was intended to be lowfat and light. The chicken breasts I buy are usually larger and I find it works best to double the other ingredients.
Oven-Fried Chicken Breasts
1/4 cup dry breadcrumbs 1 tablespoon grated Parmesan cheese 1 teaspoon paprika 1 teaspoon dried thyme 1/2 teaspoon garlic salt 1/4 teaspoon ground red pepper 1/3 cup low-fat buttermilk 4 6-ounce skinned chicken breast halves Cooking spray 1 tablespoon stick margarine or butter, melted
n Preheat oven to 400 degrees. Combine first 6 ingredients in a shallow dish. Place buttermilk in a shallow dish. Dip chicken in buttermilk; dredge in breadcrumb mixture. Place chicken, breast sides up, in a jelly-roll pan coated with cooking spray. Drizzle margarine over chicken. Bake at 400 degrees for 40 minutes or until done.
