Went to a cocktail party Saturday night, and one of the ladies brought this and it's pretty, as well as quite unique.
MINI-RUEBENS
Tiny party dark rye or pumpernickel slices can of sauerkraut Thousand Island dressing pastrami sliced very thin at deli swiss cheese slices, thinly sliced at deli
Drain the sauerkraut very well. Press out as much liquid as you can.
Mix a couple of tablespoons (maybe a little more) of the dressing into the sauerkraut until it's well coated but NOT too "soupy"
Put a generous heaping teaspoon - then spread out over surface of rye slice (open face)
Top with small square of pastrami that will fit the rye slice, then top that with a square of thinly sliced swiss cheese.
Preheat oven to low broil - Place mini-ruebens on cookie sheet and put under broiler mid-way in oven (in other words - don't put these right up close to broiler) Cook until the cheese is well melted and bubbly - Watch carefully, since the cheese can burn and brown quickly.
These are easy to make - Hope you can use this recipe - people really liked them at the party.
