Macaroni Pudding
1 qt. milk 4 oz. elbow macaroni 3 eggs 1/2 c. sugar 1 1/2 tsp. lemon rind 1 tsp. vanilla 1/2 tsp. nutmeg 1/2 c. chopped dates
Heat milk in heavy saucepan (do not boil). Add macaroni; simmer, uncovered, stirring frequently until tender. Beat eggs; add sugar and beat until thick and lemon colored. Remove mixture from heat; stir in egg mixture and remaining ingredients. Pour in lightly greased baking dish in a 300 degrees oven for 55 minutes or until knife inserted in center comes out clean. Serve warm or cold. Makes 6 to 8 servings.

1 c. elbow macaroni (do not have to precooked) 1 qt. milk 3 eggs 1/2 c. sugar 1 tsp. grated lemon peel 1 tsp. nutmeg 1 tsp. vanilla 1/2 c. raisins or dried apricots sour cream
Cook macaroni in milk, stirring occasionally until tender. Beat eggs; add sugar and beat until thick and lemon colored. Combine eggs with milk and macaroni. Stir in flavorings and raisins. Pour into lightly buttered 2-quart baking dish; bake at 300 degrees for about 45 minutes or until knife inserted in center comes out clean. Serve warm or cold with sour cream. Makes 6 to 8 servings.
