Tomato and Onion Straws
Makes 16
Oven Temperature 230°C, 450°F, Gas Mark 8

110g (4oz) Loprofin Low Protein Mix
1/2 teaspoon baking powder
Pinch of salt
50g (2oz) margarine
50g (2oz) onion, grated
1/2 teaspoon tomato puree or ketchup
2 teaspoons cold water

Sieve together the Mix, baking powder and salt. Rub in the margarine. Add the grated onion and tomato puree and mix to a soft dough with the water. Roll out on a surface lightly dusted with Mix to a 1/2cm (1/4 inch) thick rectangle. Cut into even sized 'straws' and bake for 10-15 minutes until golden brown and firm to the touch. Leave to cool.

Cafe Odyssey Onion Straws

3 Tbls. flour
1/2 cup milk
1 cup onions (cut in rings, 1/16 inch thick)
1 tsp. salt and pepper mix (2:1 ratio)

1. In large bowl, mix 1 cup of milk with onions.

2. Marinate for 1/2 hour and strain.

3. Mix flour with onions and shake excess flour.

4. Place in deep fryer at 350 degrees until brown.
