I am looking for the kind of spareribs served in virtually every chinese restaurant in the US. They are crispy on the outside, and tender on the inside. They are meaty -- but not too meaty, like the so-called “Country Ribs” -- and have a unique chinese/asian flavor.
Every recipe I have tried has fallen short.
For now, I have sort of given up hope, and what I do is boil (or par-boil) the ribs (saving the liquid for a stock), pour Kraft “Sweet Recipes” Honey Hickory Smoke BBQ sauce over them, bake them till nearly done, then broil them for a few minutes to give them a crisp finish. It tastes pretty good, but it certainly is not the “real thing.”
