Years ago, my mother took a Chinese cooking course taught by Chinese cooking teacher and author Norman Weinstein. This is the recipe for Chinese barbecued spareribs she got; I've made it many times since.
Chinese Barbecued Spareribs Serves 4-6
1/3 cup hoisin sauce 1/3 cup ketchup 1/3 cup soy sauce 3 tablespoons sherry 3 cloves garlic, minced 4 pounds spareribs, in 2 racks 1/4 cup honey
Combine first 5 ingredients and marinate spareribs, refrigerated, 2 hours or longer.
Preheat oven to 375F. Place spareribs on a rack over a roasting pan with water in the bottom to catch the drippings.
Bake 45 minutes, turning frequently. Brush both sides with honey and bake 10 minutes longer, turning once.
(May be baked the day before, refrigerated, then the ribs cut apart and reheated in the oven for 10 minutes.)
