I took a couple of Chinese cooking classes at our local Community College, and this is one of the recipes that we made. They are VERY GOOD. The classes were taught by the owner of a Chinese Restaurant.
Deep Fried Chinese Ribs
2 pounds pork spareribs (cut 1 X 2" pieces) 2 teaspoons salt 1/4 teaspoon freshly ground black pepper 2 teaspoons sugar 1/4 Cup soy sauce 1 teaspoons 5-spice powder Oil for frying
Marinate the ribs in the salt, pepper, sugar, soy sauce and 5-spice powder for at least an hour. Heat about 2 cups oil in a wok and deep fry the pork ribs until browned. Keep warm in a 250° oven while you finish cooking all the ribs.
I have used a deep fryer instead of a wok, and always use 375° temperature for the oil.
Serve as an appetizer or with stir fried vegetables and hot cooked rice for a meal. Serves 4 as a main dish, and about 12 as an appetizer.
