Hi Helen, I don't know if this is the recipe you're looking for but hopefully it's close. I'm sure you can omit the Butterscotch Sauce if you'd prefer to just sprinkle it with brown sugar. Woodford Pudding with Butterscotch Sauce 3/4 cup sugar 1/2 cup butter, softened 1 cup blackberry jam 3 eggs, beaten 1 1/2 cups flour 1/2 tsp. nutmeg 1 tsp. cinnamon 1 tsp. soda dissolved in 1/2 cup buttermilk Cream together sugar and butter; stir in blackberry jam and eggs. Combine flour, nutmeg, and cinnamon. Add alternately with buttermilk-soda mixture to creamed mixture. Beat egg whites until soft peaks form. Fold into pudding mixture. Bake in shallow greased baking dish for about 40 minutes at 325 degrees. Serve with Butterscotch Sauce. Butterscotch Sauce 1 1/2 cups dark brown sugar 4 tbsp. flour 1 cup boiling water Dash of salt 4 tbsp. butter or margarine 2 tsp. cream 1/2 tsp. vanilla Mix the sugar with the flour. Pour in the boiling water and add salt. Cook in a saucepan, stirring frequently for about 8 minutes. If it seems too thick, add a touch more boiling water.
