QUICK FUDGE FROSTING:
2 squares unsweetened chocolate 1/4 cup butter 3 cups sifted confectioners' sugar 1/8 teaspoon salt 1/4 cup hot light cream or evaporated milk, undiluted 1 teaspoon vanilla extract, or 1/2 teaspoon rum extract
Melt chocolate over hot water. Remove from heat; let cool.
In medium bowl, combine butter, sugar, salt, and 3 tablespoons hot cream. With wooden spoon, or portable electric mixer at medium speed, beat until mixture is smooth.
Add chocolate; continue beating until frosting is thick enough to spread. Add vanilla.
If frosting seems too thick, gradually beat in a little more hot cream.
Makes enough to fill and frost and 8 - or 9-inch two layer cake.
