Back home, my family used to enjoy pastries called 'shoe soles' from a local bakery. They were wonderfully flaky oval pastries, probably 8 inches in length and a good four inches across, filled with finely chopped nuts. An individual pastry had puffy and flaky parts and sometimes, if you were lucky!, wonderful flat and crispy parts that were sticky with sugar that had melted during baking. Heaven in a bakery bag!
I can't find a recipe anywhere and now that I'm living up north, I'd like to make them for my new friends. Anyone have a recipe to share? Many thanks, jean
