This is a tender, buttery cookie highlighted by the warm flavor of hazelnuts...
HAZELNUT WAFERS 3/4 cup unsalted butter (no substitute) 3/4 cup granulated sugar 1 egg 1 teaspoon vanilla 2 cups all-purpose flour 1/4 teaspoon salt 1 cup finely chopped hazelnuts (filberts), lightly toasted if desired
Cream together butter, sugar, egg and vanilla till well combined. Blend in flour and salt. Mix in hazelnuts.
Chill dough about 30 minutes or longer until firm enough to shape. Form into 1-inch balls and place on ungreased baking sheet. Flatten with tines of a fork. Bake with oven rack set above center of the oven preheated to 350° for about 15 to 18 minutes or until edges are lightly browned. Cool on wire racks. Note: I flatten the dough firmly before baking to get the thinner, crisper cookie that I prefer. Yields about 80 wafers
