Peanut Butter Cup Tassies
OK, this is a cheating recipe. Kids LOVE to help make this - and to make the ookies disappear!
Use refrigerated peanut butter cookie dough OR your favorite recipe. Place small portions in tassie pans, but do NOT form shells as they will puff up while baking.
Bake for 8-10 min. at 350F. Remove from oven, immediately press 1 miniature peanut butter cup (unwrapped ) into each tassie. Press down until the candy is level with the tin. Let set in pans 15-20 minutes on counter. Remove and cool. Makes about 4 dozen.
Lemon Tassies
3 Tbsp. fresh lemon juice 3 Tbsp. butter, melted 2 large eggs 2/3 cup sugar
Mix all ingredients in bowl. Spoon into unbaked shells. Bake 35-40 minutes. Remove from pan while still warm. Cool on wire racks. Makes about 2 dozen.
