Beet and Carrot Loaf
1 cup oil 1 1/2 cups sugar 3 egg yolks 1 cup grated carrots 1 cup grated beets 2 tsp baking powder 1/2 tsp salt 2 cups flour 1 tsp cinnamon 1/2 cup chopped nuts 3 stiffly beaten egg whites
Beat together oil, sugar, and egg yolks; add carrots and beets. Mix dry ingredients together with nuts and blend in. Fold in egg whites. Grease and flour loaf pan (1 large or 2 small). Bake at 350F for one hour. Recipe may be doubled. Freezes very well!
