No Egg Carrot Loaf
1 1/3 cups water 1 cup sugar 1 cup grated carrots 1 cup raisins 1 tsp nutmeg 1 tsp cinnamon 1/2 tsp cloves 4 tsp butter Boil all above ingredients for 5-10 minutes. Cool. Add: 2 cups flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1/2 cup walnuts
Bake at 325F in greased and floured loaf pan for approx. 1 hour.
