Swiss Cheese Braid
1 1/2 cups milk 2 tbsp. sugar or honey 1 tbsp. salt 2 tbsp. butter 2 cups grated Swiss cheese (8 oz.) 2 pkgs. dry yeast 1/2 cup warm water (105 to 115 degrees) 5 cups white flour Optional topping: 1 egg poppy or sesame seeds
Scald milk and combine with sugar (honey), salt, shortening and cheese in a large bowl. (Cheese will make a lump - don't worry.) Let cool to lukewarm.
Dissolve yeast in warm water and add to the cooled mixture. Stir well. Gradually add flour, stirring well after each addition until a stiff dough is formed. Turn out and knead 5 to 8 minutes. Place in greased bowl, turning to coat; let rise until doubled.
Punch down and divide in half. Roll each piece into an 11 x 15 inch rectangle. Cut lengthwise into 3 strips, leaving joined at one end. Braid strips loosely. Pinch ends together. Place each braid in a well-greased pan. Cover; let rise until doubled.
If desired, brush with beaten egg and sprinkle with seeds.
Bake at 350 degrees for 40 to 45 minutes.
