Coal Candy
2 cups sugar 3/4 cup light corn syrup 1/2 cup water 1 tsp anise extract 1/2 tps colored food paste (i use black)
Use a 8 inch square pan, lined with butter covered foil. put sugar, syrup, and water in a heavy 2 qt. saucepan. stir over med heat until sugar is dissolved, do not splash sides of pan.
Clip on candy thermometer. cook until temp reaches 290 deg (without stirring).
Remove from heat, stil in anise and coloring.
pour into pan and let cool completely, remove from pan, take off foil, and break into pieces.
