Lime Pie
25 to 30 chocolate thin wafers 3 tbsp. melted butter 1 cup undiluted evaporated milk 1 (3 oz.) pkg. lime Jello 1/4 cup sugar 3/4 cup boiling water 10 drops green food coloring 1 tsp. grated lemon rind 1/4 cup lemon juice (2 lemons), divided
Crush all but 12 wafers, (save 1/4 cup for topping), mix with the butter, press in bottom of 9-inch pan. Use the remaining 12 wafers to stand up around edge of pan.
Place evaporated milk in freezer to chill until crystals form around edge.
Dissolve Jello and sugar in boiling water. Add color, rind and 2 tablespoons of the lemon juice. Chill until slightly thick. Stir occasionally. Don't let it get hard.
Whip chilled milk until stiff, then add 2 tablespoons lemon juice, whip more. Fold in Jello mixture. Pour in shell.
