Gauffrettes:
Dry ingredients: Use standard 8 oz. measuring cup. Sift together 7 cups + 2 cups flour? 2 heaping tablespoons of baking powder 1/2 level teaspoon of baking soda 1 rounded teaspoon of cinnamon
Cream together in large mixing bowl: 1/2 lb. of margarine and 1/2 lb. of butter that has been slightly softened 3 level cups of granulated sugar 1 packed cup of brown sugar 7 large eggs beaten 2 or 3 at a time
Add the flavoring: 2 tablespoons of vanilla 1 teaspoon of almond extract
Add dry ingredients a little at a time.
Roll dough into long cylinders 1 1/2-inch in diameter Wrap in wax paper Let stand in refrigerator overnight for 8 to 12 hours Cut in 1/2-inch slices.
