Tzatziki-Greek Cucumber and Yogurt Sauce
1 pint plain yogurt – not the low fat kind. 1 cucumber peeled (or unpeeled) and seeds removed, chopped fine (I use my food processor) 1-2 cloves garlic, crushed Juice of 1/2 lemon Parsley or mint leaves, chopped About 1/4 cup olive oil
Put yogurt into a coffee filter and then in a strainer and then put the strainer into a pot and refrigerate for about 1 hour, until most of the liquid is removed from the yogurt.
Combine all ingredients together, with the last being the olive oil. Pour olive oil slowly into the mixture while wisking at the same time.
