I am looking for a recipe that I saw Chef John Folse cook on one of his cooking shows several years ago... called Potatoe Beignets. These were much like Potatoe pancakes. As I recall, Chef Folse baked the potatoes and I believe some of the ingredients were cheese, bacon and onion.

I have lost this recipe and would appreciate anyone who would share the recipe or tell me where I could find it.
