Diabetic Cream Cheese Balls

1 pk (8 0z. size) cream cheese
-Milkcote or whitecoat chocolate
3/4 c Finely chopped pecans

Cream the cream cheese and add pecans. Chill until cheese will form balls. Dip balls into melted whitecoat or milkcote chocolate coating.

Smoked Salmon Cream Cheese Balls

16 ounces softened cream cheese
8 ounces chopped smoked salmon
3 green onions, chopped
1/4 cup sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon horseradish
1/4 teaspoon garlic powder with parsley
1/4 teaspoon pepper
3/4 cup chopped walnuts
1/4 cup chopped fresh parsley

In a bowl, combine softened cream cheese, chopped smoked salmon, chopped green onions, sour cream, Worcestershire sauce, horseradish, garlic powder, and pepper. Chill at least 1 hour. Shape into 1-inch balls and roll in chopped walnuts then chopped parsley. Cover and chill for at least 4 hours. Serves 24.

Blue Cheese Ball

8 oz. softened cream cheese
2 oz. Maytag blue cheese
sour cream or mayonnaise
1/3 cup pecans, chopped very fine

Mix cream cheese and blue cheese together. Add some sour cream or mayonnaise to make it smoother and easier to spread. Chill, divide into 2 small balls, and roll each ball in pecans.
