FRIED CORNBREAD
1 cup Cornmeal (prefer yellow) 1 cup Flour (all purpose) 2 tablespoons sugar 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup chopped onion (chopped fine) 2 eggs 1 cup Buttermilk 1/4 cup vegetable oil
Mix dry ingredients including onions, until blended well, mix egg and buttermilk, stirring only until color evens out. Add liquid to dry ingredients stirring until blended, 50 strokes or so. Heat skillet or griddle until hot, coat with oil or spray, a drop of water on surface should sizzle and dance when at temperature. Drop by spoonful on hot surface, cook approx 2 minutes and turn to finish. Makes about 15 patties.
