beef shank requires long cooking time so it's best to be used in stew like dishes. if you have a fav. stew recipe, try it with beef shank. it's delicioud. one thing though, as beef shank shrinks a lot after cooked, it's best to cook the whole thing then slice it up if you are looking for the "roast beef" type... i do chinese red cook beef and some curry dishes with it. (but in curry, i cut it up into cubes first.) hope this helps.
