Into a large bowl mix: 2 cups. all purpose flour 3/4 cup honey 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt
Stir in: 2 cup grated carrot 1/2 cup raisins 1/2 cup shredded coconut 1 apple, peeled, and grated
In bowl, beat together: 3 eggs 3/4 cup vegetable oil 2 tsp. vanilla
Stir this into flour mixture until batter is just combined. Spoon into well greased or paper lined muffin cups, filling to the top. Bake at 350 F. for 20-22 minutes. Makes 12-14 large muffins |
