This morning I came up with this breakfast to make use of leftovers.

Strawberry Banana Cream Cheese French Toast

4 somewhat thin slices good bakery bread
(I used Safeway's Artisan Como bread)
2 Tablespoons fat-free soft cream cheese
2 Tablespoons strawberry preserves
1/3 of a banana, thinly sliced
1/3 cup Egg Beaters
1 Tablespoon skim milk
1/2 teaspoon vanilla extract
1/2 Tablespoon powdered sugar
Pam cooking spray
Dab of butter
sliced strawberries, rest of banana and more powdered sugar for garnish

Spread one side of two slices of bread with cream cheese. Press slices of banana to cheese layer to make them adhere. Spread one side of remaining two bread slices with strawberry preserves. Make two sandwiches, pressing banana covered slices to preserve covered slices. Combine Egg Beaters, milk, vanilla and powdered sugar in a shallow dish. Dip sandwiches briefly in Egg Beater mixture and fry in a hot pan sprayed with not stick cooking spray with a dab of butter added for flavor. Turn to brown both sides of sandwiches. Serve garnished with sliced strawberries, the rest of the banana and a dusting of powdered sugar. YUM!
