Cheese Sables
1 cup flour 2/3 cup butter 1 cup grated cheddar cheese dash of cayenne 1 egg, beaten (to glaze) salt
Sift flour, salt and cayenne. Add butter cut into small pieces. Rub in with finger tips. Add cheese and knead to a dough. Chill for 30 minutes.
Roll out and cut into 2 inch squares. Cut each square diagonally to form 2 triangles. Place on greased cookie sheet and brush with egg. Bake at 375 degrees for 10 minutes.
Easy variation: Take frozen puff pastry. Roll out. Add grated cheese. Fold over pastry and roll again. Cut, glaze and bake as above.
