Neither one of these are for a loaf pan size cake. You could always cut the recipe in half.

Apple Cake

1 c. vegetable oil
2 c. sugar (granulated)
4 eggs
3 tsp. vanilla
1/2 tsp. salt
2 c. flour (plain)
1/2 c. orange juice
3 tsp. baking powder
4 Tbsp. sugar
1 Tbsp. cinnamon
4 medium apples, peeled and sliced

Preheat oven to 350 degrees. Grease and flour 10-inch tube pan. Cream together oil and 2 cups sugar until light and fluffy. Add eggs, one at a time, beating well after each. Stir in vanilla and salt. Sift together flour and baking powder; add alternately with orange juice, beating well each time. Mix together 4 tablespoons sugar and cinnamon; set aside. Pour layer of batter in bottom of tube pan. Add layer of apple slices and sprinkle with cinnamon and sugar mixture. Continue alternating layers, ending with batter on top. Bake in preheated oven for 1 hour 15 minutes or until done

Apple Cake

Cake Batter:

2 c. sugar
4 eggs
1 c. oil
2 1/2 tsp. vanilla
3 tsp. baking powder
1/2 c. orange juice
3 c. flour

Filling And Topping:
3 c. apple slices
3/4 c. brown sugar
2 tsp. cinnamon

Apples are peeled and cored. Mix all the ingredients for the cake batter together. Pour 1/2 the batter into a greased and floured 13 x 9-inch pan. Put a layer of the apple mixture on top (1/2). Pour a little more cake batter on top (1/2), then the remaining apple mixture, then the leftover batter. Bake for 1 hour in 350 degrees oven or until toothpick comes out clean. If baked too long, it will not be moist.
