This is my all time favorite cobbler and it couldn't be easier. It can be adapted to any fruit but peach is wonderful.

FRUIT COBBLER

Grease a 9"x13" pan

Line bottom of pan with pared fruit (your choice) that has been cut in bite size pieces (about 6 cups).

Make a batter of:
2 sticks (1 cup) margarine, softened
1 cup sugar
1 cup milk
2 cups flour
2 tsp. baking powder
1/2 tsp. salt

Pour batter over fruit

In another bowl (I use a measuring cup) mix
1-1/3 cup sugar and 3/4 cup water. Heat/microwave just until sugar has dissolved. Pour sugar/water mixture over batter.

Bake at 350 deg. for 1 hour.

Note: if you cover the left-overs, it will still be delicious but the crust will lose it's crispiness.
