Just made a Roasted Root recipe that came out great if anyone wants it.
Roasted Roots
2 pounds turnip or rutabaga, peeled and cubed 3 parsnips, cubed 2 sweet potatoes, peeled and cubed 1 red onion, in slices
Peel and cup up into small pieces. Add 2 T. olive oil and 1 tsp. oregano and stir into the root vegetables. Place on no stick aluminum foil on a baking sheet in a 450 degree oven for 35 minutes. Stir a couple times. When done, add 2 T. balsamic vinegar with 1/2 cup orange juice and pour over them jsut before serving.
