Deidra: Here is the basic recipe I used to use back in the days when I made wedding cakes. I usually added almond extract (in addition to the vanilla) in all my frostings. I like Landy's tip too. Hope this helps.

Boiled Icing/Filling

1 Egg white -- beaten
1 cup Sugar
4 tablespoons Water -- cold
1 teaspoon Vanilla

Beat the egg white well. (If using powdered egg white, add to the amount of water specified on the package and beat before proceeding to the next step.)

In a small pan, add the water to the sugar and boil until the syrup spins a thread.

Pour (do not scrape) the hot syrup very slowly into the beaten white of egg, whipping constantly.

Flavor with vanilla and any other extracts you wish.
