i don't have a funnel cake recipe, but if you found a regular funnel cake recipe and subsituted the following mixture in place of the flour, it might work. this is the best substitute i have found for flour and it works in most recipes:

replace in equal amounts:
1/2 part brown rice flour
1 part chickpea flour
1 part tapioca flour
1 part arrowroot flour
