Found this one this morning while looking for some new ideas for Mothers Day.
Parsi Deviled Eggs
6 large eggs, hard cooked 1 1/2 tsp fresh lime juice, or more to taste 1 tsp honey 1/4 tsp salt, or more to taste 1/2 jalapeno chile, seeded and minced 1 tbsp minced fresh cilantro 1 tbsp unsalted butter, softened 1/4 cup of mayonnaise (low fat will work)
Shell the eggs, cut in half lengthwise and put the yolks in a small separate bowl. Chill the whites.
Add all of the remaining ingredients to the yolks, except the mayonnaise and mash well with a fork. Be sure to distribute the honey well. Stir in the mayonnaise and taste for lime and salt.
Spoon into white halves and fill. Best if made early in the day.
