Bourbon Chicken
Cube chicken in bite size pieces (I use chicken thighs because they are not as dry as breasts)
Marinate chicken pieces overnight in: equal parts teriyaki sauce and Lawry's Mandarin Orange and Ginger marinade a few tablespoons brown sugar 1 cup Bourbon
Heat one tablespoon oil in a frying pan. Remove the chicken from the marinade, place in the pan and fry until done. As you're frying, sprinkle the chicken pieces with some brown sugar.
While the chicken is cooking, pour the marinade into a saucepan, bring to a boil and simmer a few minutes. Serve as a sauce to pour over the chicken.
You can serve over rice.
